TOAST ON TOAST

Toast is a common breakfast item for many people in many countries. You can add butter, jam, jelly, honey, cinnamon, peanut butter, the list goes on and on and on. They’re all tasty but let’s add some healthier items 😉.

These two toasts, avocado tomato and cucumber tomato are SUPER simple, easy to make, healthy, filling, and delicious- a winning combination.

A few side notes, this is a vegan recipe as I used vegan cream “cheese”, feel free to use regular dairy cream cheese if you prefer but if you haven’t tried the vegan kind, I suggest you do. There are some really good options on the market. As someone who really really likes the taste of dairy cream cheese, I won’t go as far as to say any of the vegan brands I’ve tried taste just the same but for me it is a great substitute and most important, it doesn’t leave my stomach feeling irritated. That’s no bueno. I use the Tofutti brand as it spreads really nicely, has the salty cream cheese taste and a bit of the tang, without going overboard. It also isn’t grainy which can be the case with some others, but test out a few for yourself. 🙂

Avocado toast has become extremely popular. You can buy from many places, most of which are over priced so why not make it yourself? It costs less, takes about 10 minutes, and you can tailor it to your specific tastes. These recipes are just a starting point, feel free to get creative and add more healthy toppings. I recently added shrimp to my avocado toast. Definitely not vegan, lol, but very tasty!

INGREDIENTS

Avocado Tomato Toast

1 ripe avocado

1 vine ripened tomato

2 slices of bread (I used multigrain)

extra virgin olive oil

red pepper flakes

lime

sea salt

black pepper

DIRECTIONS

-Slice avocado in half and remove the pit. Slice the avocado lengthwise and crosswise while still in the skin. Scoop out with a spoon and add to a bowl. Do the same thing for the other half.

-Add a light drizzle of the extra virgin olive oil

-Squeeze the juice of a medium slice of lime into the avocado

-Add red pepper flakes (if you’re not sure how much would be too much for you, start with 1/8 of a tsp and you can always add more if you like). I typically use 1/4 tsp.

-Add salt and pepper to taste. Mix everything together.

-Toast the bread

-Slice the tomato in medium slices (not too thin)

-Place tomato slices on each piece of toast, add a very light sprinkling of sea salt to the tomatoes (optional). Spoon on the avocado mixture. Finish with fresh cracked black pepper and a few more chili flakes.

Cucumber Tomato Toast

1 cucumber

1 vine ripened tomato

Vegan cream cheese

2 slices of bread (I used multigrain)

sea salt

black pepper

DIRECTIONS:

-Toast the bread

-Slice the tomato in medium slices (not too thin)

-Slice the cucumber into thin slices (I prefer thin cucumber slices)

-Spread cream cheese on toast

-Layer on tomato slices

-Layer on cucumber slices

-Add sea salt and fresh cracked black pepper to taste
