APPLE PIE BITES

You know how sometimes you want a slice of apple pie without baking a whole pie? I know, I do and these Apple Pie Bites are the perfect fix! These delicious bites of tart Granny Smith apples 🍏, warm cinnamon, and sugar give you all of the classic apple pie goodness you love without the arduous task of crust making and pie baking.

INGREDIENTS

Yield: 16 servings

2 Granny Smith apples

2 pie crusts

4 tbsp unsalted butter

1 tsp cinnamon

1/4 nutmeg

1 tbsp granulated sugar

1 tbsp light brown sugar

DIRECTIONS

Preheat your oven to 350 degrees. In a small bowl mix together the cinnamon and sugar. Melt the butter. Roll out your pie crust, homemade or store bought. If using a store bought crust make sure it’s room temperature when you use it. Brush the top side of the crust with some of the butter (reserve some for later) and sprinkle half of the cinnamon and sugar mix over the crust. Slice the crust into strips. Two crusts will more than accommodate two Granny Smith apples sliced into medium sized wedges- about 8 slices per apple.

Peel and slice the Granny Smith apples. I have made this recipe with both peeled and unpeeled apples and while the green skin looks pretty it eats better without the skin on once baked.

Once the apples have been peeled wrap one of the slices with one of the pie crust strips, cinnamon sugar side facing in. Continue doing this until all apples have been wrapped. When completed place all of the apple pie slices onto a parchment lined cookie sheet.

Brush the outside of each with the remaining butter and sprinkle each with the remaining sugar mixture.

Bake in a 350 degree F oven for 12-15 minutes. Let the apple pie bites cool slightly but these should definitely be eaten warm. Serve with whipped cream, ice cream, or eat them alone. The easiest apple pie you’ll ever make!
