French toast is one of my favorite indulgent breakfast foods and minimizing the amount of dairy I consume has not stopped me from indulging. My cashew and coconut milk brioche French toast tastes even better than the old version I used to cook with heavy cream, half & half, or milk. Homemade cashew milk and canned coconut milk give the mixture a delicious taste and rich and creamy consistency. Brioche is a classic bread choice for French toast. It’s excellent at soaking up the egg mixture and has a naturally light and fluffy consistency.

The ingredient list is pretty simple so let’s get started!

First, to begin putting our brioche French toast together, in a bowl add the eggs, both kinds of milk, vanilla, cinnamon, and nutmeg. Whisk until the ingredients have been combined. Next, cut 6 slices of bread from the brioche loaf. In a dish large enough to hold all six slices pour the batter over the bread.

Allow the bread to soak for 2 minutes on each side. After the slices have had time to soak up the batter add them to a lightly oiled pan or griddle. I used a bit of coconut oil in a cast iron skillet over medium heat. The French toast only needs to cook for about 3 minutes on the first side and 2 minutes on the next or just until golden brown.

Lastly, once the French toast is done top it off with your favorite non-dairy butter, fruit, and maple syrup.

NOTES

-Brioche bread is made with butter so the while I am not adding dairy the bread itself has dairy in it.

-I made my own cashew milk using my Vitamix and this recipe for Homemade Cashew Milk

-I’m not a fan of a very “eggy” batter for my French toast. Probably because I don’t really like eggs. Ha! I tend to use fewer eggs in the batter compared to most recipes.

-My French toast was finished with vegan butter by Miyoko’s Creamery and fresh blackberries. However, any fresh berries would be a great compliment.

-Can be made completely vegan by swapping out brioche bread which is made with butter and eggs.

My cashew and coconut milk brioche French toast tastes even better than the typical French toast made with regular milk. Yummy, delicious and no added dairy for those who are lactose sensitive or choosing to minimize the amount of dairy in their diet.

Ingredients

  • 8 slices Brioche bread
  • 1/2 cup Unsweetened canned coconut milk regular not light
  • 1/4 cup Cashew milk
  • 3 Eggs
  • 1 tsp Vanilla extract
  • 1 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 2 tbsp Coconut oil extra virgin
  • Maple syrup for topping

Instructions

  • Add the eggs, both kinds of milk, vanilla, cinnamon, and nutmeg to a mixing bowl. Whisk until the ingredients have been combined.
  • Next, cut 8 slices of bread from the brioche loaf. In a dish large enough to hold all six slices pour the batter over the bread. Allow the bread to soak for 2 minutes on each side. If you don’t have a large dish give each slice a turn if using a smaller one.
  • Place a cast iron pan over medium heat and add the coconut oil. After the slices have had time to soak up the batter add them to the pan. The French toast only needs to cook for about 3 minutes on the first side and 2 minutes on the next or just until golden brown.
  • Once the French toast is done top it off with your favorite non-dairy butter, fruit, and maple syrup.
