‘Tis the season for Peppermint Bark Brownies!! Let’s get our bake on with brownies made for the holiday. Christmas is almost here and🎄🎄. as the saying goes, “it’s the most wonderful time of the year!” Time for gathering with family and friends, buying presents, decorating the tree or in my case, a Norfolk Island pine plant from the Home Depot because I didn’t feel like lugging a tree through the streets of Brooklyn, time off of work (I wish) and cooking and eating lots of holiday treats. This week I am sharing one of my favorite desserts for the holiday season. It’s easy to make and looks super festive and Christmas-y, yes, that is a word or at least it is now. 😉
You can make your brownies from scratch or from a box mix. This time I chose to use a box mix although brownies from scratch are easy to make because truthfully I didn’t feel like measuring, sifting, etc etc. I’ll share my recipe for scratch brownies in a future post. Now back to these brownies. I used Trader Joe’s Truffle Brownie Mix. For this mix, you only need to add 2 eggs and 1 stick of unsalted butter melted. Although I used Trader Joe’s brand, use the brownie mix of your choice! In addition to the brownies, you will also need white chocolate and red and white peppermint candy.
Yield: 9-12 servings (9×9 square baking dish)
Your favorite brownie mix and other ingredients according to the specific package
1 cup white chocolate chips
1/4- 1/3 cup of crushed peppermint candy
Prepare the brownies according to the directions on the package and bake.
While the brownies are baking grab your peppermint candies and toss them in a plastic bag. This will help keep you from making a mess in the kitchen when you crush them.
White Chocolate and Peppermint
Now is the time to work out any frustration you may have. Hahahaha!! I use a hammer to quickly crush the mints.
As you can see from the photo I have some pieces that are a bit larger so it isn’t just mint dust but also not so large that it makes it difficult to eat. Warning! Don’t get too crazy with the hammer or you’ll tear the bag and spill the candy. 😯
Once the brownies have finished baking allow them to cool for at least 30 minutes. After they have cooled I melt the white chocolate over a double boiler. A double boiler is very easy to set up, simply boil a pot of water and place a bowl with the white chocolate chips over it once it starts boiling. Be careful to make sure the bottom of the bowl does not touch the surface of the water. The steam from the boiling water below will melt the chocolate.
It will start melting within 30-45 seconds and should be done within 1 minute- 2 minutes depending on the size of the chips or cut chocolate.
Once the white chocolate has melted you should immediately pour it on top of the brownies. Smooth it evenly over the surface.
Immediately after smoothing the chocolate over the brownies, begin sprinkling the crushed mint candy over top. Be sure to do this while the chocolate is still melted. Once it sets the candy won’t stick as well and will fall off when you cut the brownies.
After adding the mints, let the peppermint bark brownies sit for at least 20 mins. I like to give the chocolate time to set. This way, when they’re sliced, the chocolate isn’t completely wet. Once they have set, cut, and eat! Your family and friends will be happy to devour these delicious Peppermint Bark Brownies!
